The Recipe


Here is the Broccoli Cornbread recipe I mentioned in a previous post, and folks, it's delicious! You may have a recipe for BC, but this one....well, what can I say, it's a fine representation of Grandmama Christine's Southern-style cooking. Enjoy!

Ingredients:
1 Box J*iffy Cornmeal Mix (other brands have not worked)
10 or 11 oz bag frozen broccoli cuts
6, count 'em, 6 eggs
1 stick of butter melted, but cooled
1 medium onion, chopped
1 C Grated Cheddar Cheese
1 well-greased baking dish

Now do this:
Put all liquids together (eggs, butter), add onion, broccoli, and cheese. Mix very well. Then add the box (dry) of J*iffy Cornmeal Mix, stirring well. Pour mixture into a very well greased pan. Turn oven to 350 degrees, and bake for 30 minutes or until a nice golden brown crust forms on the top. Christine emphasized that the eggs and butter are the only liquid needed for this delectible recipe.

I'm cooking that NOW! Unfortunately, our Chichi Sisters have just started laying again after a short molting hiatus so we will have to buy eggs...*: (

Let us know when the Chichi sisters are up and running Nancy. Enjoy the recipe. I wish I could say my kids like it, but...they didn't try it. Sometimes they can be a bit narrow in their tastes, and we're working on that! Frasy, I loved how easy it is. Simple is good!!!

Someone asked about the broccoli. Use frozen...any liquid will help "cook" the cornbread. Fresh is good, but needs but be cut, cleaned and steamed well prior to adding to the recipe. I'm getting hungry!!!

Whoop, Whoopy Doop! This will be a Scott Family fave! Actually I didn't get it made when I posted the first time... We had it for supper last night along with some Jalepeno Cheese Sausages.

The Chichi Sisters are laying again...They are sooo funny! When they are not in laying mode, they won't let you catch them...when they are, they run to get in front of you and drop...They think I'm a rooster since I take care of their every need.

This looks so yummy! It's almost like a quiche with all those eggs, interesting. Looks so much easier than making or using a pie shell.

Alexandra, it's delicious, I think. I tend to add more things like Broccoli, cheese, so that it's not too eggy in taste. And, this one is not! Blessings!
